Soup and crusty breads

a crusty loaf
with a pot of homemade soup
makes for a perfect early Sunday evening meal
YUM! (and healthy too!)




Of course, I topped this off with a small cup of eggnog. I think I'll make some more cookies later this week for dessert. Leftover soup and cookies make me smile!


hearty hamburger soup
adapted from The Ultimate Soup Cookbook {Readers Digest}


1 lb. ground beef
1 can diced tomatoes
3 med. carrots, sliced
2 medium potatoes, diced
1 med. onion, chopped
1/2 c. chopped celery
4 beef bouillon cubes
1 1/2 tsp. salt
1/4 tsp. black pepper
1/4 tsp. dried oregano
1 c. frozen green beans


1. In a large saucepan, brown meat. Drain off fat
2. Add in all ingredients EXCEPT for the green beans. Bring to a boil, then simmer for 15 minutes or until carrots and potatoes are tender.
3. Add in green beans, continue simmer for 15 minutes.
4. Sliced fresh baked loaf, lightly toast in oven. Add butter.
