Pancakes Schmancakes

Or so I thought. But making Oatmeal Chocolate Chip Pancakes proved to be a harder task than I had anticipated. For starters, they should put a warning on pancake recipes that a sizzling griddle will MELT your favorite spatula.

Though they came out awkward and slightly toasted {CJ: "They're burnt!" Thanks for eating them anyway hunny...),  CJ will eat anything that contains sugar or chocolate. He did however absolutely refuse to drink more than 2 sips of milk. Yes, my 33 yr old boyfriend doubles as a 6 yr old. Who needs kids these day anyway?

Le Chef of Slightly Toasted Pancakes


buttermilk oatmeal pancakes
1 c. old-fashioned oats
1 c. whole wheat flour
1 tsp. sugar
1 tsp. baking soda
1 tsp. baking soda
1 tsp. baking soda
1 tsp. salt
2 c. buttermilk
2 beaten eggs
1/2 c. semi-sweet chocolate chips (optional)

Mix the dry ingredients. Add buttermilk and eggs and mix until combined. Add in the chocolate chips. Pour 1/2 c. batter onto sizzling Pam'd skillet and flip with caution!

And drink some milk w/ them, it's good for you :)
